[OH-Publicity] OpenHatch booth at Scale

My hesitation with typing into a spreadsheet is that we'd have to provide
the computer, which we definitely can't do while the booth is empty and
would possibly be a problem even when people are there.  It's also hard to
get info from multiple people at once that way, though I don't know how
busy the booth will get.

It's annoying to digitize emails and there's a risk of not being able to
read handwriting, but it might be the better option.
