[Campus-morris-staff] list of projects

When they're ready, the git activity repos will take the form of:

github.com/um-morris-1/um-morris-1.github.io
github.com/um-morris-2/um-morris-2.github.io

Etc.  This is to allow github pages to work easily, without having to use
gh-pages branches, which are a bit advanced.

I've created some organizations and should have the repos populating them
soon.
